Make-ahead Mashed Potatoes |

Family favorite. It's my sister's recipe and I'm always misplacing it so I figured I put it here so I could find it again! Ingredients:
3 lbs. medium-size potatoes, pared |
1 1/2 cupsour cream |
4 tablespoons butter |
1 1/2 teaspoon salt |
1/4 teaspoon pepper |
1/4 cup bread crumbs |
1 tablespoons butter, melted |
Directions:
1. Cook potatoes in boiling, salted water until tender. Drain thoroughly. 2. Combine potatoes, sour cream, 4 tablespoons butter, salt and pepper in large bowl. Beat at low speed with electric mixer until blended. Beat at high speed until light and fluffy. 3. Pile lightly into a buttered 2-quart casserole dish. Cover and refrigerate overnight, if you wish. 4. Bake, covered, in a slow oven (325°) for one hour. Toss bread crumbs in one tablespoon melted butter. Sprinkle over potatoes 5. Continue baking, uncovered, 30 minutes. |
