Make Ahead Cheesy Chicken Casserole

Make ahead and freeze for a convenient ready to go meal
Ingredients:
10 ounces 98% fat free broccoli cheddar soup, condensed
1 cup fat free reduced sodium chicken broth
1 cup reduced fat cheddar cheese, shredded
3/4 cup brown rice (not instant), uncooked
1 lb boneless skinless chicken breast halves, diced
10 ounces frozen mixed vegetables
2 cups corn flakes, crushed
Directions:
1. Mix all ingredients except cereal and put in container or dish to freeze.
2. To Freeze: Aluminum casserole dishes are good because they can be used again, and Hefty makes cardboard disposable ones called ?EZ bake?. Alternatively, you can line a glass dish with aluminum foil, freeze, then take out the frozen casserole wrap in foil and place in large labeled freezer bag. When ready to use, just pop back into the original dish.
3. To cook: Thaw in refrigerator overnight, cover with foil. Bake at 375 F for 45 minutes or until chicken and rice are cooked throughout and bubbling.
4. Top with crushed cornflakes and cook for 5 more minutes. Let sit 5 minutes before serving.
