Make-A-Meal-Of-It Meatloaf

From a cookbook for beginners that I was going to throw out, Ha! I pulled out a few recipes that sounded worth saving now that I'm past toast and boiling water! This was different sounding with veggies around the mound of meatloaf. The book states that you might want to try layering 2 strips of uncooked bacon across the top of the meat loaf before you cook it as a variation. Goes well with tossed salad or cole slaw.
Ingredients:
1 1/4 lbs lean ground beef
2/3 cup evaporated milk
1/2 cup breadcrumbs or 1/2 cup cracker crumb
1/4 cup ketchup
2 teaspoons salt, divided
1/2 teaspoon pepper, divided
2 teaspoons worcestershire sauce
3 medium potatoes
3 medium carrots
2 teaspoons parsley flakes, can use fresh parsley
Directions:
1. Heat oven to 375 degrees F.
2. Combine the meat, milk, crumbs, ketchup, 1 teaspoons of the salt, 1/4 teaspoons pepper, and Worcestershire sauce in a bowl.
3. Blend really well; hands work best.
4. Shape the mixture into a loaf and place it in the center of a baking dish.
5. Arrange the vegetables in layers around the meat.
6. Sprinkle each with the remaining salt and pepper.
7. Sprinkle top layer with parsley.
8. Cover baking pan tightly with foil or lid and bake for 1 hour and uncover and continue to bake an additional 10 minutes to brown meat.
