DELICIOUS INDIVIDUAL MOIST MUFFINS/BREAD MADE WITH WHOLE CORN AND MAIZE MEAL - A REAL STAPLE AT SOUTH AFRICAN BBQ'S - WISH IT WAS MY RECIPE BUT ITS NOT BUT A DEFINITE FAVOURITE :) Ingredients:
125 ml maize meal |
300 g self-raising flour |
3ml salt |
500 ml buttermilk |
125 ml light olive oil |
250 ml cheddar cheese, grated |
410 (1 can) whole corn kernels or fresh cooked corn kernels if you prefer |
tomato soup (for one serving) i use cup-a-soup |
powdered biltong (jerky) as much as you like i use approx 150 ml |
Directions:
1. PREHEAT OVEN TO 180C 2. GREASE A LARGE MUFFIN PAN WITH 12 HOLLOWS 3. MIX ALL INGREDIENTS TOGETHER TO FORM ATHICK BATTER 4. SPOON BATTER INTO PREPARED TIN AND BAKE FOR 25-30MINUTES UNTIL GOLDEN AND A TOOTHPICK INSERTED COMES OUT CLEAN 5. HEAT SOUP ACCORDING TO PACKET INSTRUCTIONS AND SERVE 6. SPRINKLE BILTONG OVER SOUP |
