Ideal lunch/dinner dish Ingredients:
1/3 pound lasagna noodles, about 9 regular lasagna sheets, boiled according to package directions |
1 (400g) zucchini, raw |
1 (300g) mozarella cheese, sliced |
6 cups spinach, boiled |
5 cups tomato paste or crushed tomatoes |
2 tsp garlic, minced |
2 tsp oregano, dried |
2 tsp salt |
1/2 tsp pepper |
1/6 cup parmesan cheese, grated |
Directions:
1. Spread 1 cup pasta sauce on the bottom of a 5cm x 20cm x 30cm baking dish. Add one layer of cooked lasagna noodles. 2. Top lasagna with zucchini, finely cut lenghtwise 3mm tick, and 3 cups spinach. Spread 1tbsp salt, 1/4 tbsp pepper, 1 tbsp garlic, over vegetables, and top those with 200g mozarella and 1 tbsp oregano. Repeat layers, finishing with pasta and sauce. 3. Sprinkle grated Parmesan on top of the lasagna and bake uncovered for about 30-40 minutes, under medium heat. 4. Note: there should be 3layers of lasagna noodles and 2 layers of vegetables and cheese. |
