This is a Maine recipe that I have used for years. It came from my grandmother. There used to be a company that sold them but I'm not sure they are around anymore. I've also heard them called Potato candy. Read more . The servings depend on the size you cut the candies. Ingredients:
1/4 lb. butter |
3/4 cup cold white potato, mashed well |
2 lbs. confection sugar |
2 teaspoons vanilla |
1/2 lb flaked coconut |
Directions:
1. In double boiler, melt butter. 2. Then add rest of ingredients in order. 3. Have a cookie sheet (lined with parchment paper) and, working quickly because it dries out fast, place mix on 1/2 (one end) of the sheet to 1/2 thick. Trust me it will be easier to get out! 4. When hard, cut into whatever size squares you like. 5. In another double boiler melt: 6. 12 oz. semi-sweet chocolate chips 7. 4 oz. unsweetened chocolate 8. 1/2 cake of parafin wax 9. Coat coconut squares with chocolate mixture and harden on wax paper. 10. *****I have doubled,tripled, even quadrupled this recipe for gifts and it turns out perfect every time. Just be sure you only put it on one end of a cookie sheet! |
