This is a traditional Swiss recipe for Mailanderli, delicate lemon-flavored butter cookies, that is popular in many cantons throughout Switzerland. Ingredients:
1 lb unsweetened butter, softened |
1 cup sugar |
6 egg yolks |
1 tablespoon vanilla |
5 cups all-purpose flour |
2 lemons, zest of |
1 egg |
Directions:
1. Preheat oven to 325°F 2. In a bowl, cream together butter and sugar. Add egg yolks, vanilla, and lemon zest, and mix well. Gradually add flour while stirring. Chill. 3. Roll out dough to 1/4-inch thickness, and cut into desired shapes. 4. Beat remaining egg, and brush each cookie with the beaten egg. Place cookies on a parchment-lined baking sheet, and bake for 20-24 minutes or until lightly golden. |
