Ingredients:
1 1/2 cups butter, softened |
1 cup sugar |
3 egg yolks |
3 cups all-purpose flour |
1/4 teaspoon salt |
1 1/2 teaspoons vanilla extract |
1 cup strawberry jam |
sherry filling |
whipped cream (optional) |
Directions:
1. Cream butter; gradually add sugar, beating until light and fluffy. Add egg yolks, one at a time, mixing well after each addition. Add flour, salt, and vanilla, mixing well. 2. Shape dough into 1-inch balls; press dough into greased 1 3/4-inch muffin pans to form shells. Spoon 1/2 teaspoon jam into each shell. Spoon filling over jam to fill pastry shells. 3. Bake at 350° for 20 minutes or until set. Remove from pans while warm. Cool. Top each with a dollop of whipped cream, if desired. |
