Mai Pen Rai Shrimp And Chicken Thai Fried Rice |

Authentic Thai taste but made with a few canned products (chicken, shrimp, peas). My family loves this version! Ingredients:
12.5 oz. can of chicken breast chunks |
6 oz. can shrimp (broken or the really tiny ones or larger ones) |
2 t. oil |
1/2 t. minced garlic |
1/4 cup minced onion (or onion powder) |
2 eggs (beaten) |
2 cups cooked rice |
3 t. green peas (i use canned peas) |
2 t. chopped green onion |
1 1/2 t. fish sauce |
1/2 t. oyster sauce |
1/2 t. sugar |
1 lime |
Directions:
1. Heat oil then stir fry garlic & onion until fragrant. 2. Add chicken and shrimp and stir-fry until mixed well. 3. Add eggs and stir-fry until slightly solid. 4. Add rice, then peas and 5. green onions, then fish sauce, oyster sauce, and sugar. 6. Stir well to mix. 7. Squeeze on lime juice. Serve. |
