Another ceviche variation from Chef Sergio Verduzco cookbooks. Ingredients:
1 pounds mahi mahi small dice about 1/4 |
1/2 cup fresh lemon juice |
1/2 cup fresh lime juice |
1 tablespoon tabasco |
2 tablespoons kosher salt |
3 5x6 tomato small dice |
1 large yellow onion small dice |
1/2 bu fresh chopped cilantro |
Directions:
1. Mix all the ingredients allow to marinate at least 1 hr. 2. Drain off excess juice and refrigerate. 3. Good for 3 days maximum. Discard leftover after 3 days |
