Another ceviche variation from Chef Sergio Verduzco cookbooks.
Ingredients:
1 pounds mahi mahi small dice about 1/4
1/2 cup fresh lemon juice
1/2 cup fresh lime juice
1 tablespoon tabasco
2 tablespoons kosher salt
3 5x6 tomato small dice
1 large yellow onion small dice
1/2 bu fresh chopped cilantro
Directions:
1. Mix all the ingredients allow to marinate at least 1 hr.
2. Drain off excess juice and refrigerate.
3. Good for 3 days maximum. Discard leftover after 3 days
