Crockpot recipe. Easy assembly goes well with rice and green vegetable. One of those came upon me suddenly when i looked in the frig for dinner. This I designed for small crockpot but easily expanded. Ingredients:
1 medium onion |
1 1/2 lbs boneless pork roast |
0.5 (16 ounce) jar mixed fruit, peaches, pears, pineapple, and cherries and half the juice |
1 cup white wine |
1/2 cup water |
1 teaspoon rubbed sage |
salt and pepper |
Directions:
1. Spray crock. Thinly slice onion and place in bottom of crock top with roast, add wine, water, fruit. Top with seasonings. Cook on high until simmering, about 90 minutes. Turn down to low for 3 hours or until meat is cooked through. Remove meat and use stick blender to puree fruit into the liquid. (or use blender). In the crock back on high add softened cornstarch to sauce to thicken stirring until heated through. Slice and serve meat with sauce over. |
