This is a great recipe from the side of the Malt-0-Meal box. Slightly sweet muffins are a great way to get some fiber in your diet at breakfast or anytime. Ingredients:
1 1/4 cup all-purpose flour |
3/4 cup original malt-o-meal hot wheat cereal, dry |
1/2 cup sugar |
3/4 cup milk (i use 2%) |
1/4 cup vegetable oil (i use canola) |
1 egg |
1 tablespoon baking powder |
1/2 teaspoon salt |
1 teaspoon vanilla |
Directions:
1. Preheat oven to 400 degrees F. 2. In a large mixing bowl, combine all ingredients. 3. Stir together until all ingredients are moistened. 4. Pour batter into greased or paper-lined muffin pans, filling cups 3/4 full. 5. Bake 18 to 20 minutes or until center is firm to the touch. 6. Yield: 12 muffins 7. Calories: 8. I figured 177 calories per muffin. |
