This rich sauce goes perfectly with tender beef. Ingredients:
1 small onion, finely chopped |
4 tablespoons madeira wine |
3 cups beef stock |
1/2 ounce butter |
salt and black pepper |
Directions:
1. Sauté the onions in a hot pan until they are well browned then add the Madeira. 2. Reduce the liquid by half, add the stock and then reduce by half again. Season with salt and pepper. 3. Pass through a sieve, then add the butter. Serve warm. |
