Just a plain pancake recipe made a little more healthy. If you want thinner pancakes, add 1/3 cup of milk.
Ingredients:
1 1/4 cup flour
2 tbsp splenda
2 tsp baking powder
3/4 tsp salt
1/4 cup egg beaters
1 cup skim milk
1 tbsp extra virgin olive oil
Directions:
1. Mix dry ingredients in one bowl and the wet ingredients in another bowl.
2. Add wet ingredients to dry ones.
3. Mix until moistened.
4. Cook over medium-high heat on skillet or griddle.
5. Pour batter by scant 1/4 cupfuls.
