Maddeningly Delicious Marinated Vegetable Salad |

An excellent and quick summer-time dish. Make ahead and leave marinating in your fridge until it's time to eat. You want to chop all of the veggies into chunky, bite-sized pieces. Ingredients:
3 cups chunky-chopped broccoli |
3 cups chunky-chopped cauliflower |
1 red bell pepper, sliced |
2 ripe tomatoes, chopped |
1 cup mozzarella cheese, cut into 1/4-inch cubes |
1 -2 teaspoon sweet dried leaf basil |
1/2-3/4 cup your favorite vinaigrette, i like honey-dijon balsamic vinaigrette |
Directions:
1. Blanche the cauliflower and broccoli together for 3-5 minutes. 2. Strain cauliflower and broccoli, then place into a bowl of iced water to preserve colour and crispness. Strain out again. 3. Place chopped bell pepper, tomatoes, mozza, and blanched veggies into a serving bowl, sprinkle with the basil and toss lightly with a spoon until the basil is mixed in evenly. 4. Pour vinaigrette (Honey-Dijon Balsamic Vinaigrette) over everything, stir to coat and place, covered, in fridge until ready to serve. |
