From The Irish Pub cookbook A hearty, satisfying whole grain bread, a perfect accompaniment to Mac's Pub Irish Stew Macs Pub Irish Stew
Ingredients:
1 c flour
3 c coarse whole wheat flour
1 tbl wheat germ
1 tbl oat bran
1 tbl brown sugar
2 tsp baking soda
1 large egg
4 tbl unsalted butter, melted, kerrygold if you have it
1 1/2 to 1 3/4 c buttermilk
2 tbl sesame seeds(optional)
Directions:
1. 375 oven Greased and floured 9 x 5 x 3 loaf pan
2. In a large bowl stir together the dry ingredients
3. Make a well in the center
4. With a wooden spoon stir in the egg, melted butter and 3/4 C of the buttermilk
5. Mix well and gradually add enough remaining buttermilk to form a soft dough
6. Spoon the dough into the prepared pan.
7. Smooth the top with a spatula that has been dipped in water or buttermilk and sprinkle with the sesame seeds, if using.
8. Bake 35 to 40 minutes or until tester inserted in center comes out clean and the bread sounds hollow when tapped on the bottom
9. Remove from oven and let cool in the pan on a wire rack for 10 minutes.
10. Turn bread out onto the rack and let cool, right side up, for about an hour to make slicing easier.
