Macroni And Cheese-healthy Way |

Just wanted mac & cheese,but cooking the healthy way, it should not be in the menu. Found ths recipe in my healthy cookbooks and changed up a few items and let me tell you it was great. I don't like cottage cheese, but in this recipe, you would never know it was in it. Ingredients:
1 cup dried pasta (elbows, small shells, fiora, etc.) |
1/2 cup egg beaters |
1 cup fat free evaporated milk |
1 cup small curd fat free cottage cheese-plain or with chives |
1/4 cup shredded low fat cheddar cheese |
2 tbsp parmesan cheese |
dash of salt |
1 tsp pepper |
1 tsp thyme |
1 tsp paprika |
dash of nutmeg |
dash of cayenne pepper |
2 tsp dried chives |
1 tbsp dijan mustard |
1/4 cup bread crumbs |
1 tbsp butter substitute |
Directions:
1. Preheat oven to 350 2. Cook pasta in boiling water, al dente, Drain and set aside 3. In large bowl, mix well: eggbeaters thru mustard ingredients 4. Spray a 2 quart casserole pan 5. Add pasta and mix well 6. Pour into prepared pan 7. Top with bread crumbs and tab butter sub over top 8. Bake uncovered 1 hour 9. Let sit 5 minutes before serving hot |
