This recipe was given to me by my friend Macie. I'm not a chili purist so I don't judge a chili on ingredients. I judge it on taste and whether I'd dress a hot dog with it. :-) This, in my opinion, is the best chili I've ever tasted. It tastes great by itself with a little cheese and onion, and goes great with anything you'd put chili on. It is especially tasty over steamed rice. This is a mild chili. If you like it a little hotter, you know what to do. I hope you enjoy. Ingredients:
4 lbs chicken, cooked (i boil mine, precooked is o.k. time for this is not included in prep time) |
2 tablespoons olive oil |
1 lb ground beef |
1 lb smoked sausage, cut into quarter inch pieces |
2 bay leaves |
26 ounces corn and black bean salsa, walmart brand |
26 ounces lime garlic salsa, walmart brand |
3 (16 ounce) cans ranch style beans |
1/2 cup cumin |
1/2 cup chili powder |
1 tablespoon sugar |
1 tablespoon ketchup |
Directions:
1. Cook and set aside chicken, or open package of cooked chicken and set aside. 2. In a medium large pot, heat oil and brown ground beef. 3. Add sausage and heat through. 4. Add chicken to the beef and sausage mixture and cook for a couple of minutes. 5. Add bay leaves, both jars of salsa, beans, spices, sugar and ketchup. 6. Cover and simmer for an hour or so. 7. Enjoy! |
