A great substitute for mashed potatoes, this plantain mash is flavorful and simple to make. Use plantains that have mottled skins and are moderately ripe. Ingredients:
2 medium plantains, peeled and thinly sliced |
1 tablespoon olive oil |
1/2 teaspoon salt |
1 garlic clove, minced |
Directions:
1. Cook plantain slices in boiling water for 15 minutes or until tender; drain. Place plantains, oil, salt, and garlic in a bowl; mash with a potato masher until smooth. Serve immediately. |
