MACHO SPINACH AND ARTICHOKE AU GRATIN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pryor Estate in Grapevine, Texas in 1996. Ingredients:
12 ounces marinated artichoke hearts |
30 ounces frozen spinach thawed and squeezed |
9 ounces cream cheese |
6 tablespoon butter softened |
3/4 cup milk |
1 teaspoon freshly ground black pepper |
1/3 cup grated parmesan cheese |
Directions:
1. Preheat oven to 375. 2. Drain marinade from artichokes then set aside a few for garnish. 3. Distribute remaining artichokes over bottom of shallow square baking dish. 4. With mixer beat cream cheese and butter until smooth then gradually blend in milk. 5. Arrange 1/2 of the thawed and drained spinach over artichokes. 6. Spread 1/2 of cream cheese mixture over first layer then add final layer of spinach. 7. Spread remaining cream cheese over last layer of spinach then sprinkle with pepper. 8. Dust with parmesan then bake uncovered 45 minutes. 9. Garnish with additional artichokes. |
