This is a recipe I made up myself. I had little time, a couple of sole filets and shelves full of spices. I opted for mace, as it has a delicate flavour. If you happen to have long pepper, you can use that instead of black pepper. You may want to cook the filets less than 15 minutes, depending on how thick they are. Don't turn them too much, as they will fall apart. Definitely a keeper. Ingredients:
2 sole fillets (about 1/2 lb) |
2 tablespoons butter |
1/4 teaspoon black pepper |
1/2 teaspoon ground mace |
1 lemon, juice of |
1 teaspoon parsley, minced |
Directions:
1. Melt the butter in a pan. 2. Add the sole filets, side by side, and let cook for 5 minutes. 3. Turn the filets, sprinkle the pepper and mace, and cook for another 5 minutes. 4. Add the juice and cook for another 5 minutes. 5. Serve into the dishes, adding the parsley on top. |
