Macaroon Stuffed Peaches

An elegant light dessert and very easy to prepare
Ingredients:
1 egg, beaten
1 1/4 c crumbled soft coconut macaroons ( about 8)
1/4 c sugar
1/4 c almonds, chopped
1 29 oz can peach halves
1/4 c dry white wine
1/4 t ground nutmeg
butter
Directions:
1. Combine egg, macaroons, sugar and almonds. Let stand about 5 minutes to soften macaroons. Drain peaches, reserving 1/4 c syrup. Arrange peaches, cut side up in a 10x6x2 baking pan. Divide macaroon mixture evenly among peaches, dot each peach with about 1/2 t butter.
2. Combine white wine and the reserved peach syrup, stir in nutmeg. Pour wine mixture around peaches in baking dish. Bake uncovered in 375 degree oven for 20 minutes or till macaroon mixtue is lightly browned. Serve warm in bowls.
