this is a wonderful cake for coconut lovers,can be made without cocoa. Ingredients:
cake:125g butter |
1/2 cup castor sugar |
3 egg yolks |
1/2 tspn vanilla ess |
1 cup flour |
1 and 1/2 tspn baking powd |
1 and a 1/4 tblspn cocoa |
3/4 cup milk |
filling:3 egg whites |
1/2 cup icing sugar |
1 and 1/4 cup coconut |
Directions:
1. cake:beat butter and sugar till light and fluffy 2. add yolks and ess 3. add dry ingred and milk 4. filling:beat egg whites till stiff 5. add icing sugar and coconut 6. pour 2/3 of cake batter into greased tin 7. add coconut filling 8. top with remaining batter 9. bake at 180 degrees 10. cool and ice with chocolate icing or dust with icing sugar |
