My mother used to make this for an old Dutch chap my Dad used to visit every now and then. Dad and Opa B would talk about cows while eating Macaroon Cake. A must if you like things with coconut. Ingredients:
4 ounces butter |
4 ounces sugar |
3 egg yolks |
1 teaspoon vanilla essence |
6 ounces flour |
1/8 teaspoon salt |
1 teaspoon baking powder |
2 tablespoons milk |
3 egg whites |
4 ounces sugar |
1 1/2 cups coconut |
Directions:
1. Cream the butter and sugar, add the egg yolks and vanilla essence. 2. Beat well. 3. Add sifted dry ingredients alternately with milk. 4. Spread in a greased shallow tin and cover with the macaroon mixture. 5. Macaroon mixture: Beat the eggwhites until quite stiff, fold in sugar and coconut. 6. Bake for 40-45 minutes at 350 deg F. |
