Several years ago a friend brought this cake to a pot luck dinner. My husband loves it just the way it is so I usually don't use a glaze or frosting on it. Also note that there is NO baking powder in this. Ingredients:
6 eggs, separated |
1 cup shortening |
1/2 cup margarine |
3 cups sugar |
1 teaspoon almond extract |
3 cups flour, unsifted |
1 cup milk |
8 ounces coconut flakes |
Directions:
1. Grease a 10-inch tube pan. 2. Preheat oven to 300°F. 3. In a VERY large bowl, cream the shortening, margarine, and sugar until very fluffy and creamy. 4. Add egg yolks and beat plenty more. 5. Add almond extract. 6. Blend in flour and milk alternately. 7. Add coconut flakes. 8. Beat egg whites until stiff and fold in gently but thoroughly. 9. Bake for 2 hours. 10. Cool in pan completely. |
