My DH really enjoys this pie. Well, we all do, but it combines two of his favorite things - apple pie and coconut. He especially likes it warmed up with ice cream on top. This pie freezes well also. Ingredients:
1 1/2 cups all-purpose flour |
1/2 teaspoon salt |
1/2 cup shortening |
2 -3 tablespoons cold water |
4 cups sliced peeled tart apples |
1/2 cup sugar |
1/4 teaspoon ground cinnamon |
1/2 cup all-purpose flour |
1/2 cup sugar |
1/2 teaspoon baking powder |
1/4 teaspoon salt |
1 egg |
2 tablespoons butter, melted |
1/2 teaspoon vanilla extract |
1/4 cup flaked coconut |
Directions:
1. In a large bowl, combine flour and salt; cut in shortening until crumbly. 2. Gradually add cold water, tossing with a fork until a ball forms. 3. Roll out pastry to fit a 9-in. pie plate; flute edges. 4. Toss apples with sugar and cinnamon; pour into crust. 5. Bake at 375 for 20 minutes. 6. Meanwhile, in a bowl, combine the first four topping ingredients. 7. Stir in egg, butter and vanilla until smooth. 8. Add coconut. 9. Spoon over hot apples, carefully spreading to cover. 10. Bake 30 minutes longer or until apples are tender. 11. Yield: 6-8 servings. |
