Macaroni & Zucchini Salad |

A different type of pasta salad, I think this recipe was originally from Kraft. Ingredients:
250 g zucchini, sliced |
salt |
1 cup mushroom, sliced |
1 cup whole wheat macaroni, cooked |
3/4 cup light cream |
1/4 cup crunchy peanut butter |
1/2 cup mayonnaise |
1 tablespoon honey |
1 tablespoon white vinegar |
2 tablespoons lemon juice |
1/2 cup roasted peanuts |
Directions:
1. Place zucchini on kitchen paper & sprinkle with salt, allow to stand 30 minutes. 2. Rinse zucchini under cold water and pat dry. 3. Combine zucchini, mushrooms and macaroni in a salad bowl, chill while preparing dressing. 4. Place all remaining ingredients except peanuts into a blender & whip until smooth but not too thick. 5. Coat salad lightly with dressing, chill & serve garnished with roasted peanuts. |
