Macaroni with Cabbage and Ham |

A great way to use up leftovers from a New England Boiled Dinner ! Any pasta noodle will do for this hearty combo of ham, cabbage and apple. This is definitely a comfort meal for the cold weather. Enjoy! Ingredients:
2 teaspoons olive oil |
6 ounces cooked ham (diced) |
1 large onion (diced) |
4 cups green cabbage (diced) |
1 granny smith apple, appled (peeled, seeded, diced) |
3 tablespoons apple cider vinegar |
1/2 teaspoon black pepper |
1/2 cup fresh dill (chopped) |
1/3 cup sour cream |
10 ounces of cooked macaroni |
Directions:
1. Pour cooked macaroni into large bowl. 2. In large nonstick pan heat olive oil. 3. Add ham and cook until browned a bit. 4. Remove ham from pan and set aside. 5. Add the onion to the pan and cook 6-8 minutes. 6. Stir in the cabbage, apple, vinegar, and pepper. 7. Cover and cook for about 10 minutes (stirring occasionally). 8. Stir in the dill and ham. 9. cook uncovered until heated through. 10. Remove from heat and stir in sour cream. 11. Pour mixture over macaroni and stir well. |
