MACARONI TUNA SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pollard Estate in Mesquite, Texas in 1997.
Ingredients:
12 ounces canned water packed albacore tuna drained and flaked
8 ounce package small shell macaroni
2 hard boiled eggs finely chopped
1/4 cup green or red pepper chopped
2 stalks celery chopped
1 bunch green onions chopped
1 cup frozen green peas cooked and cooled
3/4 cup mayonnaise
2 tablespoons pickle relish
1 teaspoon salt
1 teaspoon freshly ground black pepper
Directions:
1. Cook macaroni according to package directions then drain and rinse with cold water. Allow to cool then add tuna, eggs, pepper, celery, onions and peas and mix well.
2. In a small bowl mix together mayonnaise, pickle relish, salt and pepper.
3. Add to the macaroni and mix well then place in refrigerator several hours before serving.
