This is a macaroni salad my mom always made for me and it is one of my favorite side dishes. Very good! Ingredients:
1 bag small macaroni noodles |
1 sm can diced olives |
6 eggs hard boiled |
approx 1 cup mayo |
approx 1/4 cup mustard |
dill pickels with some juice |
salt. |
pepper |
Directions:
1. boil the eggs 2. cook the pasta 3. cut pickles into tiny cubes (as many as you prefer) 4. mix together mayo and mustard (you can use as much as you prefer...I usually just guess) 5. Add a little pickle juice to mayo mix. 6. Once eggs have cooled dice them 7. Drain pasta and put into bowl 8. Add most of mayo mixture and stir 9. Add rest of ingrediants and mix all together adding salt and pepper to taste. 10. Add rest of mayo mix to keep salad from drying out. 11. *Note: If used next day may need to add more mayo and mustard cause it tends to dry up a little! |
