This is a favorite of my family. My grandmother used to make this ALL the time! Ingredients:
2 large bags of elbow macaroni |
1 jar of mayo |
1 cucumber |
1 white onion |
1 small cucumber ranch dressing |
3 green onions |
dill |
pepper |
salt |
4 eggs |
Directions:
1. Boil both bags of macaroni until soft. 2. Boil 4 eggs, peal off shell and chop 3. While boiling, cut up cucumber (quarter a thick slice), white onion and green onions 4. Once macaroni is finished cooking, drain. 5. Rinse macaroni off with cold water 6. In a bowl, combine drained and cooled macaroni, cucumber, white onion and green onion. 7. Add 4-6 tablespoons of mayo to coat macaroni and added ingredients. 8. Using approx half of a small bottle of Cucumber Ranch Dressing in the bowl, begin to stir. Add more if needed. 9. Add salt and pepper to desired taste. 10. After all that, toss a little dill on it to kick it up a notch. |
