This is my mom's recipe. I use that term loosely because she just throws it together, without measuring. So, be careful, these measurements are only estimates! I like my salad moist, so I usually end up adding a bit more mayo. Also, this is always better after it sits, so it's a good idea to make it a day ahead. Ingredients:
1 (16 ounce) package elbow macaroni, prepared |
3 hard-boiled eggs, diced |
1 carrot, grated |
1 (5 3/4 ounce) jar green olives, sliced |
1/2 cup olive juice |
2 tablespoons relish |
4 tablespoons mayonnaise |
2 teaspoons yellow mustard |
1/4 cup onion, finely chopped |
celery seed, to taste |
salt, to taste |
Directions:
1. Combine all ingredients in large bowl. 2. Let chill at least one hour. |
