MACARONI AND CHEESE WITH BACON This recipe came from an estate sale. I obtained it when I purchased the family collection from the Woods Estate in Canton, Texas in 1988.
Ingredients:
2 cups uncooked elbow macaroni
1/4 pound bacon
1 cup evaporated milk
1 teaspoon worcestershire sauce
2 tablespoons grated white onion
3 tablespoons flour
2 tablespoons butter
6 ounces shredded cheddar cheese
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
Directions:
1. Cook macaroni in boiling salted water according to package directions.
2. Drain cooking liquid into measuring cup adding water if necessary to make 2 cups liquid.
3. Fry bacon and drain off all except 1 tablespoon fat.
4. Add macaroni cooking liquid and bacon in saucepan over medium heat then stir in butter.
5. Stir in flour then evaporated milk with 2 cups of water.
6. Stir continuously until it starts boiling then season with salt, pepper, onion and Worcestershire.
7. Add cheese and heat mixture slowly until all cheese melts then add macaroni and heat until hot.
8. Serve hot with crumbled bacon on top.
