Macaroni and Cheese - Microwave Version |

I've made this recipe for many years. Rather than baking in the oven, a microwave is used - speeding up the process. Ingredients:
7 ounces macaroni, cooked |
3 tablespoons butter |
2 tablespoons flour |
1 teaspoon salt |
1/2 teaspoon dry mustard |
1/4 teaspoon black pepper |
4 -10 drops hot pepper sauce |
1 1/2 cups skim milk |
8 ounces cheddar cheese (or combination) or 8 ounces swiss cheese, shredded (or combination) |
3 tablespoons butter |
1/2 cup seasoned bread crumbs |
Directions:
1. Cook macaroni. 2. Put 3 tablespoons butter in a large (1 1/2 quart) casserole. Microwave until melted. 3. Blend in flour, salt, mustard, pepper, and hot sauce. Stir in milk. Microwave until thick (4-6 minutes), whisking once or twice during this time. 4. Stir in cheese. Microwave 30-90 seconds to soften/melt cheese. 5. Stir in cooked macaroni. 6. In a small bowl, melt 3 tablespoons butter in the microwave. Stir in bread crumbs. Sprinkle over casserole. 7. Microwave at 70% power for 5-7 minutes. |
