Another winner from the 2008 St. Petersburg Times Cookie Challenge. We are big fans of the macadamia nuts and it elevates this cookie to extra special Christmas status.
Ingredients:
1 cup (2 sticks) unsalted butter
1/2 cup sifted confectioners' sugar
1 teaspoon vanilla
2 cups all-purpose flour
3/4 cup quick-cooking oats, uncooked
1 (3 1/2-ounce) jar macadamia nuts, chopped
confectioners' sugar
Directions:
1. Beat butter at medium speed with an electric mixer until soft and creamy; gradually add 1/2 cup confectioners' sugar, beating well.
2. Add vanilla and flour, mixing well.
3. Stir in oats and chopped nuts.
4. Shape into 1-inch balls.
5. Place on ungreased cookie sheet. Bake at 375 degrees for 12 minutes.
6. Remove from pan.
7. Roll balls in confectioners' sugar and cool on wire racks.
8. Makes 4 dozen.
