Mac 'n' Cheese With Bacon |

Try this combination of two midweek favourites, salty bacon and creamy macaroni cheese - yum! Ingredients:
4 ounces breadcrumbs, fresh |
olive oil |
2 tablespoons butter |
2 garlic cloves, finely chopped |
2 teaspoons mustard powder |
2 tablespoons flour |
2 cups milk |
8 ounces cheese, grated |
12 ounces rigatoni pasta (other short pasta can be used) |
8 slices streaky bacon, cooked until crisp |
Directions:
1. Heat the oven to 400°F 2. Put the breadcrumbs on a baking sheet, drizzle with oil, season, and bake for 5 minutes. 3. Melt the butter in a pan. 4. Add the garlic and mustard and cook for 1 minute. Add the flour and whisk on a low heat for 1 minute. 5. Gradually whisk in the milk, then bring to a boil, whisking. Reduce heat and simmer until thick (about 4 minutes). Stir in the cheese until melted. 6. Boil the pasta until al dente, drain and mix with the cheese sauce and bacon. 7. Spoon into 4 large ramekins. Top each with breadcrumbs and bake for 20 minutes until golden. |
