Mac and Cheese Style Cauliflower

I got this recipe out a vegetarian magazine at work. I haven't made it yet. The original recipe calls for 1/2 cup nutritional yeast. I am not a vegetarian so I am omitting this. I don't believe it will adversely affect the results. If you try this before I do and find that it needs it, please let me know.
Ingredients:
1 large head cauliflower, cut into florets
2 tablespoons butter
3 tablespoons flour
2 cups milk
1 garlic clove, minced (about 1 tsp)
2 cups extra-sharp cheddar cheese, grated
1 pinch cayenne pepper
2 egg yolks
1 1/2 cups breadcrumbs
Directions:
1. Preheat oven to 350 degrees Fahrenheit.
2. Boil cauliflower until tender, 5 to 7 minutes.
3. Drain cauliflower, reserving 1 cup of the cooking liquid.
4. Set aside.
5. Over medium heat, in the same pot you cooked the cauliflower in, melt the butter.
6. Whisk in flour. Cook 1 minute, stirring constantly.
7. Whisk is milk, minced garlic and reserved cooking liquid.
8. Cook 7 to 10 minutes or until sauce is thickened, whisking constantly.
9. Remove from heat and stir in cheddar cheese, cayenne pepper, and egg yolks until cheese is melted.
10. Combine cauliflower and cheese sauce.
11. Spray a 13x9 cooking dish with non stick spray.
12. Pour cauliflower mixture into dish.
13. Sprinkle with breadcrumbs.
14. Spray breadcrumbs with cooking spray.
15. Bake for 30 minutes.
