This is my signature recipe. I always have people asking me to make these, and the dozen doesn't last long. I took a basic muffin recipe and spruced it up a bit with brown sugar and cinnamon. You can use any baking mix for this recipe. I haven't tried it with Splenda, but would be interested in trying/hearing how it turns out. Ingredients:
2 cups bisquick |
2/3 cup milk |
1 egg |
2 tablespoons butter (can substitute vegetable oil) |
1/2 teaspoon cinnamon |
1/4 teaspoon vanilla |
1/4 cup sugar |
3 tablespoons brown sugar |
2 tablespoons water (if needed) |
1/2-1 teaspoon cinnamon |
1 tablespoon sugar |
1/4 cup brown sugar (roughly, i usually eyeball this) |
Directions:
1. Preheat oven to 400 F and line muffin cups (about 12). 2. Muffins: stir egg, milk, sugars, and cinnamon together. Add bisquick and stir until moistened. if batter is too thick (which happens) add some water 2 Tbsp at a time until its a typical muffin batter. 3. Drop batter into muffin cups. 4. Topping: Combine all topping ingredients in a small bowl. Sprinkle on top of muffin batter, gently press in. 5. Bake 13-18 minuets or until golden brown. |
