Versitable dish, can be served hot or cold. Great for main dish served with Steaks, Seafood or Pork. Can take it for Potlucks, Brunches or Picnics Ingredients:
3 tablespoons olive oil |
3 cups eggplants, cubed |
3 zucchini, sliced |
1/2 cup green beans, chopped |
1 cup mushroom, sliced portabellos |
2 leeks, sliced |
1 red bell pepper, chopped |
1 yellow bell pepper, chopped |
1 carrot, sliced |
3 tomatoes, sliced |
2 garlic cloves, chopped |
1 tablespoon thyme, chopped fresh |
1 tablespoon rosemary, chopped fresh |
1 teaspoon red pepper flakes |
1 teaspoon salt |
1/2 teaspoon black pepper, fresh ground |
1 teaspoon herbes de provence |
1/2 cup low sodium chicken broth |
Directions:
1. Heat 12 skillet over medium-high heat , add olive oil, leeks sliced and garlic chopped . Saute 1-2 minutes. Add all other vegtables and spices Continue to Saute till crisp tender If pan gets to dry add Chicken Stock to lossen as you saute. Simmer on low heat 15 minutes. . |
