Ingredients 2. skinless, boneless chicken breast halves or salmon portions$ 3. t butter 4. /4 c chopped onion 5. /4 c chopped mushrooms 6. garlic cloves diced 7. /2 cup white wine 8. /4 cup fresh lemon juice (1 lemon) 9. rind of 1 lemon 10. tablespoons capers 11. teaspoons minced fresh garlic 12. /4 teaspoon salt 13. /4 teaspoon freshly ground black pepper 14. hot cooked spaghetti or wild rice steamed w/chicken broth and 1/4 c frozen italian cut green beans 15. Preparation 16. grill chicken breasts w/italian seasning 17. grill salmon as desired 18. Heat butter and oil in a large skillet over medium-high heat. Add vegges cook for 3 minutes or until browned. Add white wine, simmer till alcohol is gone (about 3-5 minutes or untill no smell). add 1/4 cup lemon juice, rind and capers,. Simmer a minute or two. Sprinkle with pepper. Serve chicken over pasta or rice. Top with sauce; |
