Lynn's Basic Cream Sauce with Fresh Herbs

Ingredients:
heavy cream
Directions:
1. heat 1T olive oil add:
2. chopped white onion
3. chopped garlic
4. saute till soft
5. add 1/2c chicken stock, 1/4 cup white wine
6. bring to simmer
7. (if steaming mussels add cleaned purged mussels now, steam about 5 min or until all are open, remove and keep warm.)
8. add 1/4 c heavy cream and 1 T butter to stock...simmer until reduced to desired consistency, add 1/4 c shredded parmesan cheese, grated lemon rind fresh chopped basil and fresh chopped thyme and juice of 1 lemon
9. return mussels to sauce
10. serve immediately over pasta or with crusty bread
11. may substitute grilled chicken or shrimp for mussles
