Lynne's Turkey Carcass Soup |

I make this soup with turkey stock that I make from the turkey carcass, but CC only had canned turkey broth to use in this recipe. This soup is soooo yummy, but the stock makes it. Makes about 8 cups. Ingredients:
1 onion, chopped |
3 cloves garlic, chopped |
2 carrots, diced |
1 stalk celery, diced |
1 c mushrooms, chopped fine |
1 1/2 t flour |
1 t olive oil |
1 tsp marjoram |
1 tsp salt |
1/2 tsp black pepper |
7 c turkey broth , home made |
1 c turkey, diced |
1/2 c barley |
Directions:
1. Note: I didn't include hot sauce as an ingredient, but you add it, to taste, at the end. 2. Saute onion and garlic in oil until soft. 3. Add carrots and celery and saute an additional 2 minutes. 4. Add mushrooms and saute an additional 2 minutes. 5. Add the flour and cook for 1 minute. 6. Add the stock, barley, majoram, salt, and pepper. 7. Bring to a boil, then reduce heat, cover, and simmer for 1 hour. 8. Add turkey, a dash or two of hot sauce, and heat to a boil. Taste and season appropriately. 9. Sprinkle with chopped parsley before serving. 10. Makes about eight, one-cup servings. |
