Luscious Lemon Curd With Raspberries

Ingredients:
4 whole egg yolks
4 whole eggs
4 lemon juiced
1/2 cup sugar
1/4 lb butter, cut in small pieces
fresh raspberries
mint leaves for garnish
Directions:
1. Combine egg, yolks, sugar and lemon juice in stainless steeel bowl
2. Place bowl directly on burner over medium heat, whisking constantly for about 3 minutes or until mixture gets frothy and thick
3. Be careful not to scramble the eggs but make sure mixture gets noticeable thicker
4. Remove the bowl from the burner and whisk in butter pieces
5. Stir well to incorporate
6. While still warm spoon into some wine glasses
7. Let cool in the glasses
8. When cool, top with raspberries and fresh mint
9. mixture will also thicken with cooling
