Incredible way to eat eggplant. Enjoy. Ingredients:
1 eggplant |
1 white onion |
1/4 cup grated parmesan cheese |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Peel eggplant and dice it and sliced onion into salted boiling water. Cook for 20 minutes then drain and toss with cheese, salt and pepper. |
