Luscious Country Humming Bird Hummingbird Cake

Delicious, chewy, sweet and moist Hummingbird Cake
Ingredients:

3 cups flour
2 cups sugar
1 tsp cinnamon
1 tsp soda
1 cup vegetable oil
3 ripe bananas ' diced
1 ' 8 oz. can crushed pineapple, drained
3 eggs (beat first)
1 cup pecans, chopped
1tsp vanilla
for the cream cheese glaze
8 ounces cream cheese
3 tablespoon soft butter
1 tablespoon lemon juice
1/2 teaspoon vanilla
1 tablespoon each, lemon and orange zest - finely minced
1 1/2 cups sifted confectioner's sugar
chopped nuts for garnish (if desired).
Directions:
1. Beat the eggs in a small bowl before adding.
2. In a medium bowl, mix first four ingredients together very well. Add oil, bananas, pineapple, pecans, vanilla and eggs.
3. Mix by hand for 2 or 3 minutes. The batter will not be smooth.
4. Pour batter into a well greased bundt pan, or sprayed with non stick cooking spray. (I use my pound cake pan).
5. Bake at 350° for 1 hour and 15 minutes.
6. Check doneness by inserting a tooth pick in the top of cake, if the tooth pick comes out clean, the cake is done.
7. Cool, remove from pan.

9. To make the glaze/ frosting:
10. Glaze: soften cream cheese and cream with butter. Stir in lemon juice, vanilla and citrus zest.
11. Fold in confectioner's sugar to make a soft, drippy glaze.
12. Drizzle over cooled cake. Allow to set. Recover excess and glaze again.
13. Use additional nuts as desired on top. (optional)
