This is a quick and easy lunch or dinner that is low in carbs. Fancy enough to serve to girlfriends; tasty enough for the fam! Ingredients:
4 boneless skinless chicken breasts |
1 avocado |
1 large tomato |
1 (3 ounce) package slivered almonds |
mayonnaise |
1 lemon |
butter |
Directions:
1. Brown chicken breasts in butter; cook completely. Remove and drain on paper towels. To assemble, layer breast, slice of avocado and tomato. Squeeze lemon juice to taste into mayonnaise; put dollop onto each chicken breast. Brown almonds in remaining butter; top chicken. Easy and very gourmet! |
