This is a family recipe. We use it as a stew as well as the topping for huevos rancheros. Dish the stew into a bowl and top with grated cheese for an extra special treat. Ingredients:
1 lb lean beef |
2 cups potatoes (cut into 1/2 inch cubes) |
1 cup green chili pepper (chopped) |
3/4 cup yellow onion (chopped) |
1 (14 ounce) can crushed tomatoes |
1 (14 ounce) can nonfat beef broth |
2 cups water |
1 tablespoon garlic salt |
1 teaspoon ground black pepper |
Directions:
1. Cut beef into 1/2 inch cubes. 2. Boil beef and onion in 1 cup of water seasoned with 1 tbl of garlic salt and black pepper until tender. 3. Add potatoes, green chilie and tomatoes. 4. Bring to boil. 5. Cook until tender and season to taste. |
