Simple & delicious.......from Lucy in NC Ingredients:
1 1/2 lbs stew beef chunks |
1 large yellow onion, chopped |
5 stalks celery, sliced thinly |
1 green pepper, chopped (1 pieces) |
1 (14 ounce) can stewed tomatoes |
3 small potatoes, cubed |
1 teaspoon salt |
1 teaspoon pepper |
1 teaspoon sugar |
2 tablespoons minute tapioca |
1 1/2 cups chopped carrots (optional) |
1 bay leaf (optional) |
Directions:
1. Layer vegetables on bottom of crock pot. 2. Add 1 bay leaf. 3. sprinkle salt, pepper, sugar & tapioca on mixture. 4. place bay leaf on vegetables. 5. add the beef. 6. pour can of stewed tomatoes on top of ingrediants. 7. Cook on low for 8 - 10 hours, depending on how you like your vegetables (firm or soft). 8. an hour before serving add some white 9. pearl onions. |
