I don't know who Lucy is, but I love this cake. It is nice, light and citrusy. Ingredients:
1 3/4 cups all-purpose flour |
1 cup sugar |
1/4 teaspoon salt |
2 teaspoons baking powder |
1/4 cup shortening |
1/4 cup butter |
2 eggs |
1 cup milk |
1 teaspoon vanilla |
1 grated orange, rind of |
Directions:
1. In a bowl, combine flour, sugar, salt and baking powder. 2. Cut in shortening and butter until mixture resembles coarse meal. 3. Set aside 1/2 cup of the mixture of the crumb topping. 4. In a seaprate bowl, beat eggs. 5. Stir in milk, vanilla and orange peel until well-mixed. 6. Beat in flour mixture until blended. 7. Turn batter into a greased 8-inch square pan. 8. Batter will be runny. 9. Top with crumb topping. 10. Bake at 350 for 35-40 minutes or until tester comes otu clean. 11. Serve warm or cold. |
