This is another of the Jewish basics of life. Eat it with a toasted bagel or bialy with a smear (cream cheese) and bliss out. Yes, this is given in a time-honored amount system to adapt to one's personal taste. Ingredients:
2 large eggs |
a handful of chopped onion |
a little vegetable oil |
a few slices of lox, cut into small pieces |
freshly ground pepper. |
Directions:
1. In a hot skillet add a little oil and cook the chopped onion until clear - do not brown. 2. While the onions are sauteing whisk the eggs. 3. When the onions are ready pour the whisked eggs over them and add the lox, too. 4. Move this mixture around a bit so it comes out like scrambled eggs. 5. Season with pepper. If you use Nova Scotia lox rather than regular it will not be salty so you may opt to add some salt, too. |
